Frosted Apple Cranberry Bars

Here is a simple bar cookie that has all the flavors of the holidays. Made with cranberries and Musselman’s Apple Butter.

Ingredients

  • BARS
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup MUSSELMAN’S® Apple Butter
  • 1 3/4 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups quick oats
  • 3/4 cup dried cranberries
  • FROSTING
  • 1/2 cup butter, softened
  • 2 Tablespoons MUSSELMAN’S® Apple Butter
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 1 Tablespoon whipping cream
  • cinnamon sugar for topping

Directions

  1. Step 1
    Preheat the oven to 350° F. Spray a 9x13 pan with nonstick spray.

  2. Step 2
    In a large mixing bowl, beat the butter, shortening, and sugars until creamy. Add the vanilla and apple butter and beat again.

  3. Step 3
    In a medium bowl combine the flour, cinnamon, salt, and oats. Slowly add to the butter mixture until everything is mixed together.

  4. Step 4
    Stir in the cranberries by hand. Spread the batter in the prepared pan.

  5. Step 5
    Bake for 24-25 minutes. Do not over bake. Remove and let cool completely.

  6. Step 6
    For the Frosting: In a mixing bowl, beat the butter until creamy. Add the apple butter and salt and beat again.

  7. Step 7
    Slowly add the powdered sugar until it is all mixed in. Add the whipping cream and beat on high for 1-2 minutes or until light and fluffy.

  8. Step 8
    Spread the frosting on top of the cooled bars and sprinkle with cinnamon sugar. Cut into 24 square bars.
