Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar, divided
  • 1/4 cup unsweetened applesauce
  • 1/4 cup apple cider
  • 1/4 cup molasses
  • 1 egg
  • 1 tsp. vanilla
  • 2 1/3 cups flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 1/2 tsp. ground ginger
  • 1 tsp. ground cloves
  • 1/2 tsp. salt

Directions

  1. Step 1
    In a mixing bowl, mix together butter and 1 cup sugar on high speed until light & fluffy. Add in apple sauce, apple cider, molasses, egg & vanilla and mix until combined.

  2. Step 2
    In a separate bowl whisk together the remaining ingredients and then incorporate the dry ingredients into the wet mixture in small batches and mix until combined. Cover and refrigerate for 2 hours.

  3. Step 3
    Preheat oven to 350 degrees. Line baking sheets with parchment paper. Place remaining 1/2 cup sugar in a shallow dish. Using a cookie scoop, divide the dough into balls, then roll them in sugar to coat evenly. Place them on the prepared baking sheet. Bake for 10-12 minutes.
