Peanut Butter Banana Muffins

This is a delicious take-along breakfast or snack, the whole family will love. Muffins are easy to make-ahead for the week with Musselman’s Original Apple Sauce.

Ingredients

  • 1 ½ cups baking mix (ex. Bisquick)
  • ½ cup sugar
  • 1 teaspoon baking powder
  • 2/3 cup bananas, mashed (about 2 medium)
  • 1 cup MUSSELMAN’S® Original Apple Sauce
  • ¼ cup peanut butter
  • 1 egg
  • 1 ½ teaspoons vanilla extract

Directions

  1. Step 1
    Preheat oven to 375°F. Spray a 12-hole muffin pan with cooking spray or line with paper liners.

  2. Step 2
    In a large bowl, combine baking mix, sugar and baking powder.

  3. Step 3
    In a small bowl, combine the mashed bananas, apple sauce, peanut butter, egg and vanilla extract. 

  4. Step 4
    Add the wet ingredients to the dry ingrediients. Stir gently to combine.

  5. Step 5
    Evenly spoon batter into prepared muffin pan. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.

  6. Step 6
    Remove the muffins from the pan and let cool on wire rack.

    What can be substituted for bananas?

      We have not tested the recipe without bananas. You could try adding a little more apple sauce (maybe 1/4 c) until the batter seems the right consistency.

    Am certainly going to try this. Can sugar substitute be exchanged for the sugar?

      We have not tested the recipe with a sugar substitute. Maybe try substituting for 1/2 of the sugar to start.

    Could this mix be made in a loaf pan?

      It is a very wet batter that makes moist muffins, so make sure that the center of your loaf is fully cooked.
