Slow Cooker Pork Loin with Vegetables

This delicious comfort meal is easy with a slow cooker and Musselman’s Apple Butter.

Ingredients

  • 2 pounds pork loin
  • 1 ½ pounds baby new potatoes
  • 1 pound baby carrots
  • 1 large red onion
  • 4 garlic cloves, minced
  • 1 cup MUSSELMAN’S® Apple Butter
  • cup Dijon mustard
  • cup soy sauce
  • 1 cup beef broth
  • salt and pepper

Directions

  1. Step 1
    Place a large nonstick skillet over medium-high heat. Once hot, season the pork loin with salt and pepper and lay it in the skillet. Sear the pork loin on all sides to seal in the juices, about 8-10 minutes. (If using a regular skillet, add 1 tablespoon oil).

  2. Step 2
    Peel the red onion and cut into large chunks. Cover the bottom of a large 6-quart slow cooker with half of the onions, potatoes, and carrots. Lay the seared pork loin over the top and surround it with the remaining vegetables.

  3. Step 3
    In a small bowl, whisk the minced garlic, apple butter, dijon mustard, soy sauce and broth together. Pour the mixture over the pork and vegetables.

  4. Step 4
    Cover the crock pot and turn on low for 8-10 hours, or high for 4-6 hours. 

  5. Step 5
    When potatoes are tender, it is ready. Cut the tenderloin into thin slices and place on a platter, surrounded by the vegetables. 

  6. Step 6
    Taste gravy, and season with salt and pepper to taste. Pour gravy over pork and serve.

    Outstanding. This is a solid recipe and will be making it into my regular rotation. I added bay leaves and some tsardust memories spice blend from Penzeys but I’m sure this dish would be stellar if left along as well. 10/10 would recommend.

      Love the bay leaf idea👍. You should always spice a dish to your family’s personal tastes. The key is the wonderful pork glaze made from apple butter, Dijon mustard, and soy sauce.

    I use apple juice in crockpot….in stead of beef broth…enhances flavor with the apple butter!!

    this turned out terrible for my family. i followed directions to a T. Pork wayyyy to dry – sauce wayyyyy too mustardy flavor! we wasted a beautiful pork loin! i’m glad for whoever enjoyed it:)

    This dish was just ‘fair’. Thank goodness my bf liked it (he’s easy to please) as I sent him home with leftovers. Too sweet for me. I could hardly finish it. I wouldn’t make it again. 😝

    I am in the process of making this right now. I do not have dijon mustard so I’m using stone ground mustard. Do you think it will be ok?

      You can use your favorite mustard for this recipe. We often match Dijon in recipes with apple butter because the tangy flavor balances the sweet.
